QUESTION:I caught hell for running out of decaf, and the in-laws came over to visit
So, I over reacted and ordered 20 # from Sweet Maria's. Now, I'm
not sure which is the best way to store it. My confusion rises from my

storage bags. I was expecting this large of an order to come in a small
burlap bag, but it showed up in plastic. So, I have the following options: 1. Use my Tilia to store under vacuum, in plastic 2. Leave in plastic bag from Sweet Maria's 3. Go shopping for a larger cloth sack or burlap bag (maybe buy burlap and
make my own bag.
I would assume this volume of decaf will last me about 4 - 6 months..
ANSWER: Burlap is not necessary. In fact, it kinda stinks and may impart a "baggy"
taste to the coffee. The easiest thing would probably be to buy a zippered
cotton pillow cover, which is about the right size for #20 of beans. And
don't store them in the basement or other damp area. #1 I wouldn't do, especially with a decaf that is probably high in moisture
already. The problem with green beans is not oxidation from air, but
fermentation and mildew frow internal moisture. Evacuating the bag will do
nothing to fix that and whatever moisture is in there will be totally unable
to escape the sealed bag. #2 is fine for short term storage - a month or two. But I suspect you will
have #20 for a lot longer than that.
