QUESTION:i just picked up some corn on the cob for 12 ears for 2 bucks. any
recommedations on storage?
ANSWER: -Steam them for 1 minute, and strip the corn off the cob with a knife. Freeze
the corn at once in sealed plastic bags (about a pound per bag). -people who are serrious about their corn on the cob start the water to boil
before they pick the ears they want to eat. The longer the corn is off the
plant/stalk the more the sweet sugars convert. I don't remember what the
sugars covert to (possibly a carbohydrate). So speed is your friend...until
the cobs are cooked. If immediate if not sooner use/eating can't be
obtained, possible precooking and freezing should be considered. -Don't, if you can help it. Sweet corn is at its best when consumed
immediately -- as in "I'll start the water boiling; kids, you go out
and pick the corn". Super-sweet varieties hold sugar longer, but none
lasts more than a few days.
Strip kernels from the cob and freeze, if you want to hold it for later use.
